Single-origin and single-estate specialty coffee beans (also available as ground coffee aligned to each brewing method), grown in St. Joseph Estate in the Perumal Malai hills of Kodaikanal, Tamil Nadu — a farm tended by a Jesuit community and shaded by hill banana, orange, avocado and jackfruit trees. This BBTC Catimor washed lot delivers black pepper spiciness and rounded fruitiness of a cherry with mushroom like characteristics.
Post-Harvest & Processing: Ripe cherries are hand-picked and pulped, then put through an extended fermentation of over 48 hours, a rinse before a final wash. This extended fermentation with intenso yeast intensifies body and sweetness beyond a standard washed process. The parchment is then sun-dried on raised beds for 10–14 days, developing the earthiness and spices with cherry in the cup.
