Single-origin and single-estate specialty coffee beans (also available as ground coffee aligned to each brewing method), grown in St. Joseph Estate in the Perumal Malai hills of Kodaikanal, Tamil Nadu — a farm tended by a Jesuit community and shaded by hill banana, orange, avocado and jackfruit trees. This BBTC Catimor washed lot delivers caramel and rounded fruitiness with a milk chocolate aroma.
Post-Harvest & Processing: Ripe cherries are hand-picked and pulped, then put through an extended double fermentation — an initial ferment of roughly 12–24 hours, a rinse, and a second ferment of a further 12–24 hours — before a final wash. This "Intenso" double-fermentation intensifies body and sweetness beyond a standard washed process. The parchment is then sun-dried on raised beds for 10–14 days, developing the caramel, rounded fruitiness and milk chocolate aroma in the cup.
