Single-origin and single-estate specialty coffee beans (also available as ground coffee aligned to each brewing method), grown in Ratnagiri Estate in the Bababudangiri hills of Chikmagalur, Karnataka. This experimental Catuai natural greets you with ripe fruit and floral aroma, unfolding into peach, berry and brown sugar sweetness with a juicy finish. A versatile funky natural which is wonderful across both warm and iced cups.
Post-Harvest & Processing: A specific strain of wild yeast is introduced to hand-picked, fully ripe cherries, which are then sealed into a nitrogen-flushed tank for an extended fermentation of roughly 72–98 hours — long enough for the yeast to work deep into the fruit while oxygen is kept out entirely. The fermented cherries are then spread on raised beds for a slow, 26-day dry with regular turning, developing the peach, berry and brown sugar sweetness that defines the cup.
