The parchment is fermented using a controlled Saccharomyces yeast culture in submerged tanks — typically for 24–48 hours — to cleanly break down the mucilage, before being washed in fresh hill water. The parchment is then sun-dried on raised beds for around 10–14 days until it reaches optimal moisture, producing the mandarin, sweet lime and raisin sweetness that carries through the
