For iced pour overs, this has been one of our favorite coffees.\u003c\/p\u003e\n\u003cp\u003ePost-Harvest \u0026amp; Processing: Ripe cherries are hand-picked and floated for sorting, then left whole (unpulped) and inoculated with a cultured starter of native yeasts and bacteria before fermenting in closed vessels for upwards of 24 hours. This \"culture\" fermentation builds complexity ahead of drying. A versatile funky natural which is wonderful across both warm and iced cups.\u003c\/p\u003e\n\u003cp\u003ePost-Harvest \u0026amp; Processing: A specific strain of wild yeast is introduced to hand-picked, fully ripe cherries, which are then sealed into a nitrogen-flushed tank for an extended fermentation of roughly 72–98 hours — long enough for the yeast to work deep into the fruit while oxygen is kept out entirely.
